Wills Domain Winery Yallingup sits atop 60 hectares of rolling hills in the north of the Margaret River region in the Gunyulgup Valley.

Our vines are planted on sun-drenched northern and western facing slopes overlooking the Indian Ocean. Wills Domain Winery Yallingup has a maritime climate that is perfect for growing wine grapes. Wills Domain showcases fine, artisanal Margaret River wines with its two old vine vineyards – Yallingup Estate (Est 1985) & Wills Domain Estate (Est 1992).

Wills Domain in Western Australia’s world renown Margaret River wine region is home to the Haunold family, father to son vignerons since 1383.

 

PALADIN HILL RED 2019

This Cabernet blend is sourced from the Wills Domain Vineyard in Yallingup. Gently picked and destemmed in the cool of the morning the fruit was cold soaked in fermenter allowed to warm naturally then inoculated with a cultured yeast strain. Fermentation was cool and slow, and at dryness was air bag pressed to barrel, where malo lactic fermentation was conducted in barrel. Following barrel maturation under cool cellaring conditions for 18 months the wine was blended filtered and bottled.

 

EIGHTFOLD CABERNET SAUVIGNON 2020

This Cabernet is very much the product of an unseasonably cool ripening period. Consequently, the wine is much finer than you would typically see under the Eight Fold label, and more broadly from Margaret River. Thus, in making this wine we have focused on gentle colour and extraction techniques whilst on skins during fermentation and avoided extended post ferment maceration. Similarly, it is not a year where the wines would benefit from lots of new oak or extended time in barrel. This wine is 95% Cabernet WD Block 4, and 5% Cabernet Yallingup Block 3.

 

MYSTIC SPRING CABERNET SAUVIGNON 2020

The Cabernet was sourced from the Rivenleigh vineyard in central Margaret River and both the Merlot and Cabernet franc sourced from the Wills Domain vineyard. Machine picked in the cool of the morning, the fruit was gently destemmed and cold soaked for 5 days before being warmed and inoculated.
